See vid below. Watch the arm swing at 1:31 (freeze it if you need too). Alizée's swinging arm appears to flow in an arc of motion that takes the forearm past a normal joint stop. At first we might attribute it to an optical illusion, but if she is double jointed, the arm could indeed be momentarily forming an arc opposite the joint. This is why the motion looks stunted when performed by someone who is not double jointed. They simply cannot obtain the arc, no matter how good of a dancer they are.

I don't know for sure, but the ability to do the wave at 1:27 might also benefit from the flex. It would allow the arm to extend 100% straight whereas most people will have an ever so slight bend. It's hard to catch, but perhaps enough to perceive subconsciously when watching someone else do the dance and realize something is missing.
Oh, and the hand twirl at 0:35. A double joint at the elbow allows Alizée to do the wrist twist while keeping elbow 100% straight. Most people can do the twirl, but not without their forearm rotating off center.
