I found my palate changed as I got older. It certainly changes for food, but also for adult beverages. When I had kids, I stopped drinking for 20 years. To be a good example. Didn't help much - they still did what they wanted to do
. Prior to that, I liked beers with a heavy malty taste (particularly Belgium), stouts, and ales. Now I have no taste for malty beers at all. I prefer very hoppy beers, like IPA's.
